Atoles

Ingredients:

  • 1 cup fresh masa (corn dough) or 1 cup masa flour  mixed with a 1/2 cup hot water to   blend
  • 3 cups water
  • 1 can of evaporated milk
  • 1/2 a piloncillo  chopped or 1/2 cup brown sugar
  • 1 stick cinnamon (canela)
  • 1 tsp of vanilla extract
  • a pinch of salt

Directions:

In a blender add the water, masa, evaporated milk, brown sugar, pinch of salt,  and blend until smooth. In a medium size pot, on medium heat, pour the mixture and  add the cinnamon stick.  Stir the mixture constantly until it begins to thicken. Taste the atole for sweetness, if you like more sweetness and more brown sugar to taste and continue to stir for 5 more minutes on low heat and then remove from heat.

Serving suggestions:

Serve hot in cups with a warm sweet bread, birote, tamales, cookies, or drink by itself.
