Ingredients:
- 1 cup white rice
- 2 tbsp of olive oil
- 3 tbsp finely chopped white onion
- 1 finely minced garlic clove
- 2 1/2 cups of low sodium chicken broth
- salt to taste
Directions:
Heat the oil over medium high heat in a heavy pan. Add the rice and stir continuously for about 4 minutes. Add the onion and garlic and continue to stir and fry until onion is transparent.
Pour in the broth and season with salt to taste. Reduce to low heat cover and let it simmer until rice has cooked through, about 20 to 25 minutes. Stir the rice about 2 times during the cooking process to make sure all the flavors get distributed evenly. The rice will cook until the liquid has evaporated and it has cooked through and has a fluffy consistency.
