- 2 1/2 cups Milk
- 1 can evaporated milk
- 1 cup Short-grain rice
- 1 Cinnamon stick
- a pinch of Salt
- 1/2 cup of sugar
- 1 tsp of Vanilla extract
- ground cinnamon
Directions:
Place the milk, rice, vanilla extract, cinnamon stick, and salt in a medium pot and bring to a boil over medium heat. Reduce heat to very low and simmer, stirring often and scraping bottom, for about 45 minutes or until rice has cooked through and plumped. Add sugar to taste and simmer for 5 more minutes and stir constantly to prevent anything from sticking to the bottom of the pot.
Serving suggestions:
Serve hot or cold. Both ways taste delicious. Top with ground cinnamon and a few raisins.
