Barbacoa de Res

 
 
                                                                            
Ingredients:
 
  • 4 dry pasilla peppers (cleaned, seeds removed)
  • 2 garlic cloves
  • 4 lbs of chuck roast cut into cubes
  • 1 can of beer (regular or light is fine)
  • 2 dry california peppers (cleaned, and seeds removed)
  • salt
  • 3 pepper corns
  • a pinch of oregano
  • 3 fresh mint leaves
  • chopped onions 
  • chopped cilantro  
  • 3 sheets of banana leaves
  • 1 small red tomato
  • olive oil
 
Directions:
In a pan heat 2tsp of oil, place the  2 garlic cloves, dry peppers, and small tomato into your pan and cook until lightly toasted.
In a blender pour the beer,  garlic,  dry peppers, tomato, mint leaves, pepper corns, oregano, and 1/2 tsp of salt blend well until smooth.
 
In  a large resealable plastic bag,  put the meat and sprinkle with salt, and 1/2 tsp of olive oil. Pour your blended sauce into the bag, and close it tightly. Shake your bag making sure that every piece of meat gets covered with the sauce. Put your bag in a bowl  to prevent any leaks and  place in your refrigerator overnight or atleast 6 hours to let all the flavors combine.
 
Preheat your oven 300 degrees. Fill a roasting pan half way with water. In the roasting pan lay the banana leaves making them overlap at the ends. Place your meat on top of the banana leaves and wrap it aorund the meat like a big tamal. Cover the roastin pan with foil and place it in the middle rack of your oven. Lower your temperature to 275 degrees.  Check the liquid in your roasting pan about every 3o - 40 minutes  naking sure liquid stays about the same and add more water when needed.
Let your meat cook for about 2 1/4 hours,  your meat will be flavorfull, juicy and fall apart fork tender.
 
Serving suggestion:
Serve warm with a side of red rice and beans. Top your meat with finely chopped cilantro and onion, half a lime and some salsa if you like the extra heat. Warm  tortillas (preferably corn).
You can also serve the barbacoa in tacos. Warm your tortillas  fill with meat, laddle some juice from the roasting pan on top of the meat( about 1tsp for each taco) and top with onions, cilantro, salsa and lime juice. Delicioso,Enjoy!!!!!!
