Caldo de Pollo

       
                                                                                  
       
       
         
        Ingredients:
         
          •  1 whole chicken remove skin and cut apart (breast, wings, thighs,drumsticks)
          • 1/2 large onion cut into 4 pieces
          • 1 garlic cloves
          • 1 bay leaf 
          • ground black pepper
          • 2 celery ribs, with leaves
          • 2 small  potatoes cut into pieces
          • 1 small bunch of  cilantro or 1/2 of a large
          • 2 calabacitas (Mexican squash) cut into pieces
          • 2 large carrots cut into pieces
          • salt
          • 1 large red tomato diced
          • 1 tsp of olive oil
          • 1/2 tsp of dry Italian seasoning
          (Vegetables should be cut about the same size)
           
          Preparation:
             In a large stockpot (about 6 quarts) heat the oil and saute the onion, garlic, and tomato add ground black pepper, Italian seasoning, bay leave, and 1 tsp of salt. Once the onion is translucent add your chicken and fill your pot with water. Add the celery and cilantro and cover your pot.Bring this to a boil and remove the excess fat that collects at the top, then lower the heat and simmer for an hour  or until the chicken is tender.  Remove the soup from the heat and strain it, save the pieces of chicken and carrots and  discard the other seasoning ingredients. Return the strained broth to the heat then add the squash and potatoes.When the vegetables are tender, return the chicken and carrots to the pot and simmer five minutes longer and add salt to taste. Serve the soup in deep bowls, with a piece of chicken and vegetables.  
          Serving suggestions:
          • If you like heat you can add some  finely chopped Serrano or Jalapeño peppers.
          •  or Add the juice of 1/2 a Mexican lime
          •  or a side of red rice
          • or a side of warm tortillas.
