Camarones Empanizados

Ingredients:

  • 2 eggs, mix with a fork
  • 2 cups of seasoned bread crumbs
  • vegetable oil for frying
  • 1 lb of large shrimp, cleaned and deveined

    Directions:

  •

In a bowl add the eggs, and all the shrimp.  In a plate add the seasoned crumbs, put the shrimp one by one in the bread crumbs press them down on each side  to coat them evenly.

In a frying pan heat the oil, add about 4 shrimp at a time. Fry the shrimp evenly on both sides about 2 minutes until you get a golden crisp color. When you take them out of the oil, put the shrimp on a paper towel to soak up the excess oil.  Cover the shrimp with aluminum foil while you finish cooking the rest of the shrimp to prevent the shrimp from cooling.

    Serving suggestions:

Serve the shrimp immediately after cooking,  add a side of your favorite red or white rice, beans, cabbage, green salad, or steamed vegetables.
