Carne de Puerco en Salsa Verde (pork meat in green sauce)

 
                                                           
 
Ingredients:
 
 
  • 1 pound of pork ribs
  • 1 pound of  pork meat into chunks 
  • 2 pounds of green tomato (tomatillo)
  • 3 large potatoes cut into cubes
  • 3 cloves garlic
  • 3 jalapeño peppers 
  • 1 slice of onion
  • salt
  • pepper
  • oil
  • 1/3 cup of cilantro
  • 1 bay leave
 
 
Procedure:
 
In a medium pot cook the tomatillos, and the jalapeños add 1/4 tsp of salt and enough water to cook everything.
Once everything is cooked through, place in a blender 2 cups  of water,  jalapeños, tomatillos, 1/2 tsp of salt, cilantro and  1garlic clove blend everything until smooth.
 
In a large sauce pan on low heat: put the pork, bay leave,  1 cup of water, and  season with salt and pepper . Cover and let it cook through. When the water reduces the meat will begin to fry in its own fat.  Add the onions, 1 minced garlic and potatoes stirring frequently to prevent anything from burning. Once onion is translucent, gradually begin to add the green sauce and let it boil for 5 minutes on low heat at this time taste and add any needed salt. Continue to simmer on low heat until potatoes are cooked through.
 Note: For those who do not like heat you can substitute the jalapeños for 1 bell pepper, it also gives it good flavor with out any heat.
 
Serving Suggestion:
Serve on a plate with a side of beans, rice and warm tortillas.
