Ingredients: - 1 pound cooked shrimp
- 1/2 cup fresh lime juice
- 3/4 cup ketchup
- 1 to 2 tablespoons hot sauce ( Valentina, Tapatio, Huichol, Castillo - habanero)
- 1 teaspoon Worcestershire sauce
- 1/2 small purple onion, finely diced
- 1 medium-sized cucumber, peeled seeds removed and chopped small
- 1/2 cup (loosely packed) chopped cilantro
- 1 ripe avocado
- salt
- ground black pepper
Directions: Place the shrimp in a large bowl and add the lime juice, ketchup, hot sauce, Worcestershire, onion, cucumber, cilantro, season with salt and pepper to taste. Mix with a spoon. Cut the avocado in half, and gently cut into small cubes. Serving suggestions: Serve in cocktail cups makes about 4 to 6 servings depending on the size of the cups. Top each serving with the diced avocado, and a side of saltines. Always serve chilled. |
