Ingredients: - 1 pound vegetable shortening
- 2 pounds corn masa mix
- 1 large egg
- 2 cups sugar
- pinch salt
Directions: Preheat oven to 425 degrees. Grease cookie sheet with shortening and set aside. In a large bowl,cream vegetable shortening and sugar until very soft. Add egg, salt, and mix together. Add the corn masa mix a little at a time and continue to mix until all the masa mix has been added. Place 2 tbsp of the dough for each cookie in the baking sheet, you can use less if you want smaller cookies. Bake for about 20 minutes or until the coricos are a light golden brown. Serving Suggestions: Coricos go great with coffee, hot chocolate, atole or milk. |
