Ingredients:
- 3 large chicken breast, no skin or bone (cut into strips)
- or 3 to 4 thin beef steaks
- 1 garlic clove minced
- 1/2 white onion sliced
- 1/2 purple onion sliced
- 1 green bell pepper cut Julian style ( strips)
- 1 yellow bell pepper cut Julian style (strips)
- 1 red bell pepper cut Julian style (strips)
- 2 tbsp of Soy sauce
- 1 or 2 Serrano peppers (optional if you like the heat)
- 2 tbsp Worcestershire sauce
- 2 tbsp of chopped cilantro
- a pinch of dry oregano
- salt & pepper
- 1/2 tsp of paprika
- 1/2 tsp of ground cumin
- 1 cup of shredded Monterrey jack cheese
- 1/2 cup of your favorite light beer
- 2 tbsp of lime juice
- oil
- 1dry bay leaves
- flour tortillas
- Guacamole for the side
Procedure:
In a large comal (cast iron) or frying pan heat the oil, then add bell peppers, onions, bay leave, garlic, Serrano peppers, oregano, season with salt and pepper to taste. Cook until onion becomes translucent stirring occasionally. Add the chicken or beef, paprika, ground cumin, Soy sauce, Worcestershire sauce, and beer. Cook until chicken or meat has cooked through stirring frequently.
Add lime juice,then lower heat and keep cooking until liquid evaporates (about 1 min). Add salt and pepper to taste, and sprinkle cilantro on top.
Serving suggestions: Serve warm top with shredded cheese, add a side of guacamole and warm tortillas.
