Frijoles Puercos

                                                                    
Ingredients:
 
  • 4 cups of cooked beans with broth
  • 2 cups of bean broth
  • 1 small purple onion, finely chopped
  • 1/2 cup Mexican chorizo
  • 3 wiener franks, chopped into pieces
  • 5 strips of bacon chopped into pieces
  • 3 slices of ham, chopped into pieces
  • 2 minced garlic cloves
  • 1 tbsp of chopped mint or cilantro
 
 
Directions:
In a large pot cook the bacon until crispy. Once the bacon is cooked, put it on a plate with paper towels to soak up the excess fat.  Leave the drippings in the pot a long with 2 tbsp of the bacon fat. Add the chorizo, wieners, ham, onion, garlic, and sauteed until the onion is translucent.  Add the cooked beans, bean broth, mint leaves and bring to a boil. Once the beans are boiling smash them well with a potato smasher ( do not mix in a blender). Add the  cooked bacon  and simmer on low heat  for 10 minutes.  Add salt to taste.
