Ingredients:
 
  • 1 cup all purpose flour
  • 1/2 cup  vegetable shortening
  • 1/3 cup of  granulated sugar
  • 1 orange (peel & juice)
  • 1 egg
  • 1/4 tsp of baking soda
  • granulated sugar for topping as needed
 
Directions:
 
In a bowl add  the flour and baking soda,(sieved) mix together  and set aside.
In a bowl add the vegetable shortening and the sugar, mix until fluffy.  Mix in the egg, orange juice, orange peel, dry ingredients and mix just until all the ingredients have been well incorporated.  Flour your board and rolling pin.  Roll out your dough to about 1/4 of inch thick.  Preheat your oven to 350.
Use a 2 inch round cookie cutter, to press down on the dough.  Place on a greased baking sheet and bake until golden.  In a bowl add granulated sugar.  When you take the cookies out of the oven, (while warm) roll them in sugar and shake off the excess. Place them on a rack to cool completely.
