Pozole Verde

 
                                                                      
 
 
Ingredients:
 
  • 2 medium cans  of white hominy
  • 2 pounds fresh tomatillos, remove husks and wash
  • 3 to 4 fresh jalapeño peppers, stems removed
  • 1 medium onion
  • 3 garlic cloves
  • 1 bay leave
  • 2 celery stalks
  • Water as needed
  • 1 whole chicken, skin removed, washed and cut apart, ( breast, thighs, drumsticks, wings)
  • Salt to taste
  • 1 whole tomato
  • 4 whole black pepper corns
  • 1/2 cup of cilantro
**** If you don't want to use chicken you can substitute for pork.
 

Toppings:
3 cups shredded iceberg or  cabbage
2 cups of finely chopped onion
1 cup of thinly sliced radishes
2 ripe avocados, diced
Dried oregano
Tostadas home made or store bought
Salsa picante
Mexican limes
 
Directions:
(Cooking the chicken)
In a large pot cook the chicken with plenty of water, to reserve the broth. Add 1 medium onion, salt, 2 garlic cloves,4 whole black pepper corns, 1 bay leave, 1 whole tomato, 2 stalks of celery and cook on medium heat until chicken has cooked through. Make sure not to over cook the chicken.  Once chicken has cooked through take it out and strain the chicken broth. Once  the broth is strained pour it back into the pot and set the cooked chicken aside.
 
 
Preparing green sauce:
 In a medium pot add the tomatillos, fill the pot with water and season well with salt. Cook on high heat for 15 minutes, then remove from heat cover and set aside for 10 minutes. In a blender add,  cooked tomatillos,  jalapeño peppers, 1 garlic,  2 cups of chicken broth, 1/2 cup of cilantro and blend very well until smooth. You can make the green sauce in 2 batches so that it won't spill when blending. 
 
 
Once sauce is ready, pour into the large pot with the chicken stock. Simmer on medium heat for 10 minutes then add the white hominy and the chicken mix well simmer for 10 more minutes. Add salt to taste and simmer for 10 more minutes. add remaining chicken broth and hominy.
 
Serving suggestions:
Serve warm in bowls  with toppings. Serve crunchy tostadas on the side home-made or store bought. Accompany with a large cup of  agua de Horchata, Jamaica, or a really cold beer of your choice.
