Salsa Verde

                                                                                                           
Ingredients:

  • 1 1/2 lb tomatillos, remove husks and wash
  • 1/2 a white onion
  • 1/3 cup chopped cilantro
  • 5  Jalapeño peppers or 5 Serrano peppers, stems removed
  • Salt to taste
Directions:

You can make the salsa by roasting or cooking the ingredients. 

Roasting:  Cut the tomatillos in 1/2 and place them on a baking sheet.  Add the onion, garlic, jalapeños, and drizzle everything with olive oil. Season with ground black pepper and salt to taste. Roast in the broiler for about 10 to 15  minutes or until evenly charred.  Turn the ingredients 1 time during the roasting, to cook them evenly.
 

Boiled: In a medium pot add the  tomatillos, a pinch of salt,  peppers and  cover with water. Bring to a boil and simmer for about 5 minutes or until peppers and tomatillos have cooked through.

Add all the ingredients in a blender and 1 cup of water season with salt to taste and blend well until smooth.
